For the Fajitas

1sweet potato, peeled and cut into ½-inch cubes

8wheat tortillas (around 15 cm in diameter)

For the Sauce

1lime

1 cupyogurt

3pinches salt

For the Topping

1-½ cupscherry tomatoes, quartered

1avocado, peeled, chopped

2romaine hearts, chopped
Directions
Preheat the oven to 395°F.
For the fajitas, place the sweet potato cubes in a medium bowl. Add the olive oil and 4 pinches of the Fajita Seasoning Blend; toss to evenly coat the potatoes with the mix.
Spread the sweet potato cubes onto a greased rimmed baking sheet. Roast in the oven for 15 minutes. About 2 minutes before the potatoes are done, moisten the tortillas with water, then place them in the oven along with the potatoes to warm the tortilla.
For the sauce, cut the lime in half and squeeze the juice into a small bowl. Add yogurt and salt; mix well.
Place the roasted sweet potato cubes in a large bowl. Add the tomatoes and avocados; mix lightly. Season with the remaining Fajita Seasoning Blend.
Place the chopped romaine on the warm tortillas; top with the vegetable mixture and yogurt sauce. Roll up tightly to serve.
