Ingredients

    Caprese Topping

    red pepper with stem
  • 2 pkg.
    (8 oz. each) cream cheese, softened
  • 1-½ cups
    shredded sharp cheddar cheese
  • 3
    green onions, sliced
  • 2 cups
    crushed tortilla chips

Directions

Cut the stem off the top of the red pepper; reserve the stem for later use.

Chop the red pepper; place it in a medium bowl.  Add the cream cheese, Caprese Topping, cheddar cheese and onions; mix well.

Place 2 large pieces of plastic wrap on your work surface.  Spoon the cream cheese mixture onto the center of the plastic wrap.  Shape the cream cheese mixture into a ball, using the ends of the plastic wrap to help shape the cream cheese mixture into the ball, then tightly wrap the cheese ball tightly with the ends of the plastic wrap.

Wrap 4 large rubber bands around the wrapped cheese ball to make 4 indentations in the cheese ball to resemble a pumpkin.

Refrigerate the cheese ball for at least 2 hours or up to 24 hours. (The longer you refrigerate the cheese ball, the better the flavor and deeper the indentations are in the cheese ball.)

Remove the rubber bands and the plastic wrap.

Roll the cheese ball in the crushed tortilla chips. Gently press the red pepper stem into the top of the cheese ball for the pumpkin’s stem .

Tip:

If 4 rubber bands do not make deep enough indentations in the cheese ball, use a total of 8 rubber bands, using 2 rubber bands to make each of the 4 indentations. Serve the cheese ball with your favorite crackers or  tortilla chips.
