    butter
  • 1
    onion, cut into small cubes
  • 3
    leeks, cut into thick slices
  • ½ lb
    baking potatoes, peeled, cut into 1-inch cubes
  • 3-¾ cups
    vegetable stock
  • ¾ cup
    heavy whipping cream

Directions

Melt the butter in a Dutch oven or small stockpot over medium heat. Add the onions and cook for 3 minutes, stirring frequently. Add the leeks, potatoes and the Potato Allrounder.

Stir in the vegetable stock and cook over medium-low heat for 15 minutes or until the vegetables are tender, stirring occasionally. Remove the pan from the heat.

Add the whipping cream. Use a hand blender to blend the soup until smooth.

Tip:

Season with salt before serving, if desired.
