5fresh on-the-vine tomatoes

2rustic demi baguettes (2,7 oz. each), 4 halves split

1can (14-½ oz.) diced tomatoes, drained

½ cupshredded mozzarella cheese

2 Tbspolive oil
Directions
Remove and discard stems from the fresh tomatoes. Use a serrated knife to make a shallow 1-inch “x” cut in the bottom of each fresh tomato.
Bring a large saucepan of water to boil. Add the fresh tomatoes; cook about 30 seconds, then use a slotted spoon to remove tomatoes from the saucepan. Place in a colander, then immediately rinse with cold running water. Cool completely.
Heat oven to 425ºF. Remove and discard the peels from the blanched tomatoes, then cut each tomato crosswise into 4 wedges. Cut and remove the core from each tomato wedge, then cut them crosswise into thin slices. Place in a small bowl. Add the olive oil and Italian Panini; toss to evenly coat the tomato slices with the oil mixture.
Cut the baguettes lengthwise in half; place, cut sides up, on a parchment-covered baking sheet. Cover evenly with the canned tomatoes.
Top with the fresh tomato wedges and cheese.
Bake for 10 minutes or until the cheese is melted.
If using a convection oven, reduce the oven temperature to 375ºF.
