For the Chicken:

3boneless, skinless chicken breasts (approx. 1.5 lbs.)

Preheat the oven to 400°F.

Use a sharp knife to make 3 crosswise slits in top of each chicken breast, cutting each slit just halfway through to bottom of breast.

Cut each tomato into 5 slices, then cut each slice in half. Cut the mozzarella cheese into 9 slices.

Place 1 tomato piece and 1 cheese slice in each slit in the chicken breasts. Discard the remaining tomato piece.

Sprinkle the chicken evenly with the Caprese Topping. Set aside.

Mix all the Sauce ingredients in a shallow 13x9-inch casserole dish until well blended.

Place the chicken breasts, cut sides up, in a single layer over the sauce in the casserole dish. Top with the cheese.

Bake for 25 to 30 minutes or until the chicken is done (165°F).

Serve with your favorite side dish, such as hot cooked rice, pasta or gnocchi.
