Ingredients

  • For the Meatballs:

    ground meatloaf mix
  • ¾ cup
    dry breadcrumbs
  • ½ cup
    grated Parmesan cheese
  • Salt and pepper

    egg, beaten
  • ⅓ cup
    water, divided use

  • 1 can
    (15 oz.) tomato sauce
  • 4
    submarine sandwich rolls, partially split 
  • 2 cups
    (8 oz.) shredded mozzarella cheese
  • 1 oz.
    grated Parmesan cheese
  • Small fresh basil leaves (for garnish)

Directions

Preheat the oven to 400°F. Cover the bottom of a large rimmed baking sheet with parchment paper.

Mix the meat, breadcrumbs, Parmesan cheese, salt, pepper, egg and Italian Meatball (Seasoning Blend) in a large bowl just until blended. Gradually mix in water, a few tablespoons at a time, just until the meat mixture holds together and can easily be shaped into balls. (Do not overmix the meat mixture.)

Use an ice cream scoop or a large spoon to scoop about 2-½ Tbsp. of the meat mixture into the palms of your hands, then roll the meat mixture into a ball.  Place on the prepared baking sheet. Repeat with the remaining meat mixture.

Bake the meatballs for 20 minutes or until the meatballs are done (160°F).  About 5 minutes before the meatballs are done, heat the tomato sauce in a saucepan over medium heat.

Remove the meatballs from the oven. Turn the oven off, then preheat the broiler.

Fill the submarine rolls with the meatballs, then drizzle the meatballs evenly with the warm tomato sauce. Top with the mozzarella cheese.

Place the sandwiches, cheese sides up, on a clean baking sheet.

Broil, 6 inches from the heat, until the cheese is melted and lightly browned. (Watch carefully so that the cheese doesn’t burn.)

Sprinkle the sandwiches with the Parmesan cheese and the basil.
