
Italian Pasta Salad | Recipe
This pasta salad recipe tastes like summer, like Italy, like Tuscany. An aromatic Mediterranean pasta salad with arugula, tomatoes, mozzarella and our secret ingredient, this delicious salad is the perfect accompaniment to any buffet. This Italian pasta salad can easily be prepared and taken along to the next BBQ party or instead enjoyed as a lunch in the office. Feel free to prepare this recipe using your favorite type of pasta. But we think fusilli and other short pasta varieties, such as farfalle or penne, simply fit best.
Ingredients

2 cups(½ of 16-oz. pkg.) fusilli

1/4 cupolive oil

2 cupsarugula

½ cuppine nuts

1 ½ cupscherry tomatoes, cut in half

8 ozmini mozzarella balls

2 Tbspwhite balsamic vinegar
Directions
Cook the pasta in salted water until al dente as directed on the package.
Drain the warm pasta, then place it in a large bowl. Add the olive oil and Pasta Allrounder; mix lightly. Cool the pasta completely.
Wash the rocket, then pat it dry. Reserve it for later use.
Without oil or fat, roast the pine nuts in a small nonstick skillet over medium heat until golden brown, stirring occasionally to make sure the pine nuts don’t burn.
Add the pine nuts to the pasta along with the tomatoes, mozzarella and vinegar, then mix the ingredients lightly. Refrigerate the salad for 1 hour.
Stir the rocket into the salad just before serving.
For an extra kick you can add crispy bacon or sausage to the salad just before serving.
