Ingredients

  • For the Salad:

  • 2 cups
    of tightly packed mixed salad greens
  • 4
    stalks fresh mint
  • 2
    mini cucumbers, sliced
  • 1 pkg.
    (10 oz.) cherry tomatoes, cut in half
  • 9 oz
    halloumi cheese, cut into 1-inch-thick slices
  • 1 Tbsp
    olive oil
  • For the Dressing:

  • 1-½ tsp
    Caprese Topping

  • 1/4 cup
    olive oil
  • 1-½ Tbsp
    fresh lemon juice
  • 1 tsp
    maple syrup

Directions

Place the salad greens on 2 salad plates and top with the mint leaves, cucumbers and tomatoes.

Heat a grill pan over medium heat.

Brush both sides of the cheese slices with the 1 Tbsp. olive oil.

Place the cheese slices on the grill pan. Cook 2 to 3 minutes on each side or until the cheese slices are grill marked on both sides.

Mix the Dressing ingredients until well blended. Drizzle over the salads.

Top with the cheese slices.

Serve immediately.
