  • For the Avocado Cream

  • 1
    fully ripe avocado
  • 2 Tbsp
    Canola oil
  • 1 Tbsp
    lemon juice
  • ½ tsp
    salt

Split, then toast the English muffins.

Cook the bacon in a large skillet over medium heat for 4 minutes or until crisp, turning once. Transfer the bacon to a paper towel-covered plate, reserving the bacon drippings in the skillet.

Slip the cracked eggs into the reserved bacon drippings in the skillet, leaving a space between the eggs. Cook the eggs for 1 minute, then cover the skillet with the lid and cook the eggs over medium-low heat for 5 minutes or until the egg whites are set and the yolks are cooked to the desired doneness.

Meanwhile, scoop the avocado flesh into a medium bowl. Add the oil, lemon juice and salt. Mash the avocado with a fork until the avocado is of the desired consistency and the ingredients are well blended.

Spread 2 of the muffin halves with the Avocado Cream. Top with the bacon, fried eggs and Egg Topping. Cover with the remaining muffin halves.
