4ears corn on the cob, kernels removed (about 3 cups corn kernels)

2 ozfeta or Cotija cheese, finely crumbled

½ cupthin green onion slices (green parts only)

½ cupfresh cilantro leaves, finely chopped

1jalapeño pepper, seeded, finely chopped

2garlic cloves, minced
-
2 Tbspmayonnaise
-
1lime, juiced

⅛ tsp.salt
Directions
Heat the oil in a large nonstick skillet over high heat.
Add the corn, then season it with the salt. Toss the corn just once or twice, then cook it, without stirring, for 2 minutes or until the bottoms of the corn kernels are charred. Stir the corn, then continue to cook it for 10 minutes or until all of the corn kernels are evenly charred on all sides, stirring every 2 minutes.
Spoon the charred corn into a large bowl. Add the cheese, onions, cilantro, peppers, garlic, mayonnaise, lime juice and the Fajita Seasoning Blend; mix lightly.
Season the corn with additional salt and/or Fajita Seasoning Blend to taste, if desired.
Serve warm.
