3 Tbspolive oil

3carrots, chopped

1eggplant, chopped

1zucchini, chopped

1yellow pepper, chopped

1red pepper, chopped

1red onion, chopped

3garlic cloves, minced

1 Tbsptomato paste

1 can(15 oz.) tomato sauce

Dash of black pepper

¼ tspsalt

For the croutons
-
10slices bread

3 Tbspolive oil
Directions
Heat the olive oil in a large skillet over high heat. Add the vegetables and garlic; cook and stir for 5 minutes. Stir in the tomato paste, then cook for another 30 seconds.
Add the tomato sauce; stir. Bring to a boil, stirring frequently. Season with the salt, black pepper and Vegetable Allrounder; stir. Simmer over medium-low heat for 15 minutes, stirring occasionally.
Remove and discard the crusts from the bread slices. Cut the bread into small pieces.
Heat the olive oil in a large skillet over medium heat. Add the bread; cook and stir for 5 minutes or until crisp, stirring occasionally.
Top the vegetables with the croutons just before serving.
