1/4 cupbalsamic vinegar

1/4 cupwater

1red onion, cut into thin strips

½ lbboneless skinless chicken breasts, cut into thin slices

3 Tbspolive oil, divided

1 pkg.(10.58 oz.) Romaine lettuce hearts, cut crosswise into thin strips

2on-the-vine tomatoes, finely chopped

½ cupnonfat plain Greek yogurt
-
¼ tspsalt
Directions
Bring vinegar, water and salt to a boil in a medium saucepan over medium heat. Add the onions and stir. Return to a boil, then remove the saucepan from the heat. Set aside until ready to use.
Place the chicken in a medium bowl. Mix 2 Tbsp. of the olive oil with the Gyros (Seasoning Blend) and pour over the chicken. Toss the chicken to evenly coat it with the oil mixture.
Heat the remaining oil in a medium skillet over medium-high heat. Add the chicken; cook for 5 minutes or until the chicken is done, stirring frequently. Remove the skillet from the heat.
Pour the onions into a colander to drain.
Place the lettuce in 2 serving bowls; top with the chicken, tomatoes, onions and yogurt.
